How is it September?!?! Where did the summer go? Again this week the moving has not ended. It feels as though it may never end. We had a yard sale this weekend which was very successful! A few months back by creative husband bought a PALLET of mystery amazon from our local Re-store for date night. This was very fun, but also left us with a huge amount of stuff we did not need. Turns out it makes for great yard sale material. If you are looking for a fun date night, this was a good one! My only recommendation is buy 5 or less, not 25 like we did😅. Now to get to what you came here for…the food!
A quick recap on how this meal plan works. There will be 1 meal prepped lunch for grown ups, 3 dinners with leftovers every other night. One of the dinners will be vegetarian/ vegan. This is a tiny step we are taking to try and lower our impact on the planet.

Three-Bean Salad with Lemon, Mint, and Parsley

I put this a 6-12 serving because the recipe makes 6, but if you are making it for 2 you’d want to double for the week. This was a really simple salad to throw together. I actually made a 4 bean salad. I bought a 3 bean mix but added garbanzo beans because you know I love them. I liked how they have you marinate the onions and garlic in the lemon juice to mellow them out, and then that becomes the dressing. I also like that they mention to rinse your beans. Did you know that the liquid in the cans of beans is what gives you gas, not the beans themselves. The more you know!

Baked Chicken Toquito Nachos

I love to make healthy junk food! This was a really fun dinner. I prepped these in the afternoon because we were (if you can’t tell by the countertops) at the old house moving. I quickly popped them in the oven and we had a fun quick dinner. This recipe only makes 12, which was perfect for us for one dinner. To do this for two nights I would prep the filling all at once, and then roll them quickly each night. The filling using a store bought rotisserie chicken which makes this so easy. I also customized these to each of us. Mine had no cheese, Asher’s had filling and cheese, and Kyle had everything+ jalapeños. I marked the spicy ones with peppers on top. Beef Short Ribs with Chipotle Sweet Potatoes

This is a family favorite. They didn’t have boneless short ribs at the store, but bone in work great. I would just get more because the bones add weight that isn’t edible. I also make mine in the crockpot instead of the oven, because I prefer leave the crockpot on if I have to leave the house. You just cook it on high for 4 hours or low for 8 works great too. The chipotle sweet potatoes can be as spicy as you want them to be. Asher isn’t quite ready for a Kyle level of spicy. So instead of boiling the potatoes, I roast them at 400 degrees for 20 minutes. I just pull out enough for him before mashing them. Delicious.

You may recognize this meal from a few weeks back. It makes such a huge amount I froze half of it. I am happy to report it froze well! I also froze the quinoa after I made way way to much one night. This made for the easiest quickest meal when I was in a hurry. I added peas this week partly to cool it down, but also just to add a bit more color.
