We had such a lovely time on our camping trip last weekend! It has been tough to get back into the rhythm of things since we got back though. We all came back with a coldðŸ˜(not covid so no need to worry). So that has made it extra hard! Asher is a trooper, he hasn’t been all that bothered by it. Because it has been an off week, I never managed to get lunches made and we just had sandwiches. I will re-share my favorite salad we’ve had recently. Hopefully you week was more fun than ours, and I hope you enjoy the yummy meals we had!
A quick recap on how this meal plan works. There will be 1 meal prepped lunch for grown ups, 3 dinners with leftovers every other night. One of the dinners will be vegetarian/ vegan. This is a tiny step we are taking to try and lower our impact on the planet.

Moroccan Farro Grain Bowl

The first time I made this I had never had farro before but I will 100% be making this again. The farro has a really nice chew and is very filling. This grain bowl has a delicious herby dressing, and a salty crunch from the pistachios. The store was out of dried apricots, so I substituted with dried mango which I totally recommend doing. Those sweet chewy bites are such a treat! One of my favorite lunches I’ve made recently.

Sticky Sausage Tray Bake

I thought this meal was so interesting with all the different kinds of root vegetables. This dinner was a high in prep, but low in cooking effort. It has you cook the veggies for about an hour, but it definitely took longer. I would probably try cooking at 400 degrees instead of 350 and checking every 20 minutes. I cooked half hot sausages, and half bratwurst. Asher LOVED the bratwurst. He is so funny, and such a toddler. He will try any meat as long as you call it a “burger”. He ate almost a whole “burger” with each dinner. 😂

Tuscan White Bean Skillet

This was my favorite meal of the week! It seriously took 30 minutes or less to make, prep time included!!! It was super flavorful and I can’t get over how easy it was. I wasn’t on my game, so we bought a yummy artisan bread from whole foods to go with it. If you are feeling up to it my unbelievably easy bread would also be yummy! Baked Honey Garlic Chicken

This dinner was also super easy! You simply mix up the sauce coat the chicken and toss it in the oven. I intended to buy broccoli to go with this but I either forgot or it didn’t make it with my grocery delivery. So I resorted to whatever frozen veggies I had. Asher’s was served with his favorite peas, and I threw some edamame on mine. I really liked the Montreal steak seasoning the sauce used. It is pretty pepper-y, and will be useful for other meals later. Asher was super into this meal, he started asking for more when he was only half way through his first plate.
