4/18 Meal Plan

This week has flown by, I’m not entirely sure what has happened. One thing I do know, is that we ate yummy food. Asher is so busy it is really keeping me on my toes! I’m a little lost for words this week so I’m going to get right to it.

A quick recap on how this meal plan works. There will be 1 meal prepped lunch for grown ups, 3 dinners with leftovers every other night. One of the dinners will be vegetarian/ vegan. This is a tiny step we are taking to try and lower our impact on the planet.

Asian Peanut Grain Bowl

This weeks salad was so pretty! A little rainbow in a bowl. The recipe above says it only makes 2 lunches so I will share what I did to beef it up to 10. I didn’t have any peanuts for the top, but I had some leftover pistachios from last week. To make this a bit more peanut-y, I did add some peanutbutter to the dressing. It also calls for sprouted grains, but that sounded like a lot of work so I just used a mixture of wild rice and quinoa, and I left out the cauliflower because I don’t like raw cauliflower.

Salad ingredients to make 10 lunches

Salad

  • 1/2 nappa cabbage
  • 1/2 red cabbage
  • 1 bunch of kale
  • 2 large carrots
  • 1 red bell pepper
  • 1 -12oz jar of baby corn
  • 1 cucumber
  • 1 1/2 cups edamame
  • 3/4 cup wild rice (uncooked)
  • 3/4 cup quinoa (uncooked)
  • Small handful of peanuts
  • Salt and pepper

Dressing

  • 12 TBSP olive oil
  • 6 TBSP rice wine vinegar
  • 6 TBSP soy sauce
  • 3 TBSP honey
  • 3 garlic cloves
  • 3 tsp ginger
  • 2 TBSP Peanutbutter
  • Pepper to taste

Herb Turkey Burgers and Sweet Potato Fries

I am so excited to have another one of my own recipes a part of this weeks meal plan! The first night Asher only ate his pea’s. So the second night I made him a burger bowl instead and he ate every bite. I think he has outgrown his separated plates and wants his food all mingling together. All that being said this is a household favorite, and you will be happy you tried it out!

Mexican Cauliflower Rice

This admittedly was not the prettiest meal, but it was tasty. The recipe calls for chorizo, but offers vegan options. I typically avoid meat replacement products, but I have been curious about the Beyond Meat line. I got a spicy breakfast sausage, and a apple sausage. Both were vegan and soy free. This meal was super easy to make, a great mid-week meal!

Chicken Brunswick Stew

This recipe did not disappoint! It has so much stuff in it and was very satisfying. I used a sugar free bbq sauce, which was surprisingly sweet. They don’t provide instructions on how to cook the chicken so I will share how I did it. Did you know that you can cook from frozen in your pressure cooker? I put my FROZEN chicken with a cup of water in my ninja foodi (could use an instant-pot) and set it on high for 25 minutes. And it was fully cooked and ready to shred when it came out! We are big bbq lovers, so we will definitely have this one again. I served Asher’s with a little cheese and mine with some hot sauce.
